The essence of Chablis is the undercover nature of the limes grown there. They look like grapes called Chardonnay. They befriend the soil only to infiltrate it later. But boy oh boy, this soil is not your run-off-the mill soil. It is more complex than your ex on anti-depressants. Somehow they make it work and hold it together. This always leads to the hottest sex and the result is a wine that comes from trauma. It will always be strong and stand its ground with austerity and directness. This is real Chablis.
