Picture a row of sunbaked stone walls hugging a tidy plot of vines while a gaggle of monks in habits tiptoe out at dusk, goblets in hand. They clink, sip, and smirk the Clos du Chapitre as if each bottle contains a relic — because to them it does. They hide away the wine behind the chapel door like contraband. “Share?” one murmurs, pouring another glass. “Only if you can recite the office backward and bring us fresh bread.” They guard their Clos du Chapitre like medieval sommeliers with vows of secrecy and very selective charity. We are almost as selective as the monks of yore - we know it's superb.
